1 pound of Mexican melting cheeses, grated (we used a combination of Oaxaca cheese, queso quesadilla and mozzarella)

1 tablespoon neutral oil

1 small yellow or white onion, julienned (cut into thin strips)

1 poblano pepper, seeded, cut into thin strips

2 roma or plum tomatoes, cored and cut into strips

salt, to taste

black pepper, to taste

For serving:

warm corn tortillas

crispy tortilla chips

Move a rack to the upper third of the oven and preheat to 450 degrees. Spray an oven-safe skillet or baking dish with nonstick cooking spray and set aside.

Heat the oil in a separate sauté pan. Cook the onions and peppers until soft. Once soft, add the tomatoes and cook for 3-4 minutes. Season well with salt and pepper, set aside.

Place the grated cheese in the oiled skillet or baking dish. Bake until completely melted, about 10 minutes. Carefully remove from the oven and top with the onion and pepper mixtures. Continue baking for 5-8 minutes, until the cheese is bubbling and browned along the edges and part of the top.

Serve immediately with warmed tortillas and dips.
